Beef encounters on offer at hotel chain

A Northumberland hotel group’s executive chef has pledged to support a year-long promotional campaign by the National Beef Association.

Philippe Wavarin plans to come up with a series of seasonal recipes using the very best of British beef at Eshott Hall and other Robert Parker Collection hotels.

From ribs to rumps, tails to tongues and shins to steaks the quality of British beef is world renowned, and the group aims to take advantage of that, he said.

Philippe aims to showcase the huge diversity of beef cuts available and how they can be utilised in everyday recipes.
